What do you usually cook with your beetroot? I’ve seen beetroot soups, stews and salads. Beetroot is used for fresh juices, risotto and burgers but even the Guardian didn’t mention this little tropical delight from Kerala in India.
This spicy, tropical, purple delight has become my favorite beetroot dish. This beetroot thoran is made within 10 minutes and will impress your friends and family!
In May 2014 me and Renate travelled through kerala state in India where we met Katharina, a warm and friendly woman. We were staying in the backwaters of Kerala on a small island in a rural area. (Which by the way is a gorgeous place to go! check the picture!) Catharina was the hostess who looked after the place and cooked for us. She taught us the recipe for this beetroot thoran…for which we’re eternally thankfull.
Beetroot Thoran basically is grated beetroot, coconut flakes, onion, garlic and green pepper stir-fried together. I still remember Catharina walking outside to pick a fresh coconut from the tree, cracking it open and using it for this beetroot thoran. What a way of living, compared to back here in the Netherlands where we’ve to get our coconut in the supermarket or buy prepacked coconut flakes. We now make this dish quite often because it’s very easy, exceptionally delicious and, for us, it’s full of memories from India.
To make this beetroot thoran you need a few things. A grater and a pan, some ingredients and 15 minutes of your time. We were taught to make this recipe with green pepper but you can choose what pepper you wish to use. We like it spicy and recommend to use green Habenero pepper or Thai bird’s eye pepper. When you don’t like it hot, just use a green jalapeno or a green chile pepper.
Beetroot Thoran Recipe
- ½ pound (250 gr.) Uncooked, fresh Beetroot
- 1 Onion
- 1 green pepper (depending on your taste)
- 4 Cloves of garlic
- ¾ cup of coconut flakes
- 1 tablespoon coconut oil
- Grate the raw beetroot
- Finely chop the onion, pepper and garlic
- Mix the beetroot, onion, pepper, garlic and coconut flakes together
- Bring a pan up to high heat and add the coconut oil
- Stir-fry the mixture for about 3 minutes
