Cranberry Oatmeal Cake
  • 1½ cups (350mL) hot water
  • 1 cup (90gr) (Organic) Whole oats
  • 1 cup (180gr)Brown sugar
  • 1 cup (100gr)white sugar
  • ½ cup (120gr) butter
  • 2 eggs
  • 1⅓ cup (160gr) All-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • ⅔ cup (80gr) dried cranberries
  • ¼ cup (60gr) butter
  • ½ cup (90gr) Brown sugar
  • 1 tbsp Milk
  • ⅔ cup (60gr) coconut flakes
Cranberry Oatmeal Cake
  1. Preheat the oven to 350°F (175°C)
  2. Combine the hot water and the oats and let it soak while preparing the other ingredients.
  3. Whisk together the butter, both sugars and beat in the eggs untill it's a 'cream'
  4. In another bowl, mix together the flour, baking soda, cinnamon and salt.
  5. Add hald the flour mixture to the butter mix, followed by the soaked oats and add the remaining flour. Add the cranberries. Mix between additions.
  6. Pour the mixture into a baking tray and bake for about 40 minutes.
The Topping
  1. When the cake is done and removed from the oven, turn the oven to broil.
  2. Add the butter, brown sugar, and milk together in a saucepan and bring to a boil, keep stirring. Boil for about 1 minute and add the coconut.
  3. Pour it evenly out over the cake and broil in the oven for 1 minute.
