Kickstart your day with Homemade Blood Orange + Honey Granola packed with Nuts 'n Cranberries. A delish energy-boost full of protein, vitamins and minerals.

The Granola
  • ½ pound (250gr) Rolled Oats
  • ⅓ pound (150gr) Mixed unsalted, unroasted nuts (walnut, pecan, almond, hazelnut, brazil nut)
  • 1 ounce (25gr) Pumpkin seeds
  • 1 ounce (25gr) Sunflower seeds
  • Zest of 3 blood oranges
  • A large handfull of dried cranberries, or as you like
The Sauce
  • 1½ tbsp Coconut Oil
  • Juice of 4 blood oranges
  • 3 ounce (75gr) Honey
The sauce
  1. In a small saucepan bring to a boil the coconut oil, blood orange juice and honey. Remove from heat when it starts to boil.
The Granola
  1. Preheat the oven to 395°F (200°C)
  2. In a large bowl mix together the nuts, seeds, rolled oats and the blood orange zest.
  3. Pour the sauce over it and mix well untill all oats are covered/sticky.
  4. Evenly spread the Granola onto a bakingsheet lined with baking paper.
  5. Then put the granola in the oven for 3 x 5 minutes. Toss the granola after every 5 minutes.
  6. Keep a watch inthe last five minutes, it can go fast and you don't want it to burn.
  7. Let the granola cool down completely and add the cranberries
  8. Store in a airtight jar or container, you can keep it for at least 2-3 weeks (maybe even longer)
  9. Enjoy with curd, milk or (greek) yogurt!
