Simple summer avocado salad with tomato & peanuts from Myanmar!

A light and refreshing avocado salad

Ingredients
  • 2 ripe Avocados
  • 2 ripe tomatoes
  • 1 shallot or small onion
  • 5 tbsp finely ground peanuts
  • 2 tbsp peanut oil (or olive oil)
  • Pinch of salt
  • Pinch of pepper
  • 1 tbsp Lime juice
  • Pinch of 5 spices powder
Instructions
  1. Slice the avocados and tomatoes in little cubes
  2. Finely chop the shallot / onion
  3. Mix this together
  4. Mix together in a seperate bowl the oil, pepper, salt, lime juice and five-spices-powder to create a dressing.
  5. Add the dressing to the salad and mix it through, be carefull not to damage the avocado cubes to much!
  6. Sprinkle the salad with the ground peanuts.
