A mouthwatering Dutch Pea soup

Serves: 6 - 8
  • 3 celery sticks
  • 2 chopped onions
  • 1 (1/2 pound) large carrot
  • 2 bay leaves
  • ½ teaspoon thyme
  • ½ teaspoon oregano
  • 1 Lbs washed Split Peas
  • ½ pound piece of bacon
  • ½ gallon water
  • Pinch of salt and pepper
  1. Chop the onion and cut the carrot and celery
  2. Warm a splash of olive oil and saute the onion, celery and carrot together with the thyme and oregano
  3. When the vegetables are soft, add the water, split peas, bay leaves and the piece of bacon
  4. Let it boil for about 45 minutes
  5. Remove the piece of bacon and chop it in small pieces
  6. Puree the soup using a handblender
  7. Put the chopped bacon in the soup again and let it boil for another 2 hours
  8. minutes before ending add the sliced smoked sausage
  9. Turn of the heat and let it sit for 24 hours before serving.
  10. Serve with darkbrown bread or rye bread with slices of smoked bacon!
